The combination of a commercial formulation of Bacillus cereus spores (LAB-Ger) with salami, mortadella, sausages, meatballs, cooked ham, meatloaf, and cereal (rice koji mash) produced a significant increase in the levels of B. cereus counts in the products under test as compared to the control (the levels of B. cereus spores in the products without additives were 3.7-4.5 log(10) CFU/g). The developed method is accurate, rapid and combines a mere filtration with the determination of the number of spores, employing the most commonly used cultural medium for B. cereus count.
